In this recipe I’ll show you a quick and easy recipe combining spinach with pre-cooked shrimp. With a lovely base of onion, garlic and scotch bonnet pepper, this spinach with shrimp will be full of flavor, but the trick is to cook it fast so all those wonderful flavors is not lost. This is very similar to how typical spinach (or bhagi) is cooked in the Caribbean.
You’ll need…
1 med onion
2 tablespoon olive oil
1 bunch spinach
2 cloves garlic
pinch salt
1/4 teaspoon black pepper
1/4 scotch bonnet pepper
1 cup pre-cooked shrimp.
