I have been wanting to try this recipe for quite some time. It was creamy with a little heat, and just delicious.
I tried this on the new 22″ griddle I recently assembled and I really enjoyed it. Now, the other part to this story is, my whole system was a little thrown off and I feel like it showed in the video.
Ingredients:
1lb eastern shrimp, peeled and deveined
1/2 cup mayo
1/4 cup Thai sweet chili sauce
2 tsp Sriracha (more if you want it hotter)
1/2 cup corn starch
1/2 cup buttermilk
1 teaspoon salt (for the cornstarch)
1 teaspoon pepper (for the cornstarch)
Cooking oil (1 cup or more)
Scallions for garnish
* Peel and devein shrimp and place in a bowl.
* Add buttermilk and place corn starch (w/salt and pepper) in a bowl, and bread shrimp.
* Mix the mayo, chili sauce, and Sriracha, and set a side.
* Cook shrimp until done (2 min on each side) add to the sauce bowl. Toss in the sauce until coated, and on to a plate. Garnish with scallions.
* Enjoy.
